Honduras SHG roasted by EPOS is more complex than its HG counterpart, making it a specialty coffee; SHG (Strictly High Grown) specifies that the coffee was grown at around 1350 meters altitude. The mountainous Peru’s Amazon region is composed mainly of rain forests (75%) and this allows the coffee to grow and flourish under the shadows of the large trees of the forest. Peruvian hard bean coffee that comes from the Chanchamayo province, located in central Peru. It grows between 1200 and 2000 meters above sea level. The farms belong to small producers with less than 2 hectares of land that generate around 3000 lbs of coffee per harvest. It is a shade-grown coffee and cultivated at high altitude in order to produce denser beans and a more complex cup, feature of its maturation process. In addition, the producers have made a remarkable effort to produce a high quality bean by only using sustainable farming practices. This Sumatra Gayo Mandheling Raja is processed very carefully, after the selection of red berries on the tree of small farmers who have every incentive to grow their crops at an altitude of 1200 meters. It is a semi-washed coffee. The pulp is eliminated by the same owner and then dried. Smallholders bring their coffee to their central processing plant where it is peeled and left as “semi-wet”. This method of transformation in stages, gives coffee beans their famous bluish color and allows the characteristic of low acidity and heavy body, typical of Indonesian coffee beans.
